What kind of food is Mike serving?

Bess:

It's Mexican and Canadian cuisine, which is obviously why they are having their grand opening on the Independence Day of the USA.

Molly:

What is Canadian cuisine anyway?

Bess:

According to Mike you just put gravy on everything.
